Pane Zichi, typical of the town of Bonorva, is a very ancient baked product. Similar in shape to carasau bread, but thicker, it used to be baked in a wood-fired oven and then left to cool without dividing it into two sheets. The result was a crispy bread ball that was cut into small pieces.Zichi breadused to be the “pasta” of past times, but today it is still a mouth-watering preparation: its pieces are boiled in an aromatic broth for a few minutes as if they were pasta, and are then dressed with plenty of tomato sauce– which can also be replaced by traditional meat sauces or seasonal vegetables – and grated cheese.
