Wildflower is one of the least caloric honeys and is considered more complete than single-flower honeys, as it has higher nutritional values and a strong restorative power. Its colour varies from light to dark, depending on the geographical area of production, as do its aroma and flavour, which vary in nuance while maintaining a constant sweet and aromatic note. It can be used as an ingredient in desserts or as a natural sweetener for fruit salads, ice cream, yoghurt and herbal teas; or used to make a salad of fresh and dried fruit, olives and fennel even tastier and more creative. Crystallisation ensures that the honey has not undergone any heat treatment and remains an absolutely natural product. The honey regains its fluidity if heated in a bain-marie at a temperature of 40° C for no longer than 15 minutes, in order to preserve its health and organoleptic characteristics.
